how do you use the divine symbol?

You mean the +energy Divine Symbol?

You equip it in the shield/focii section and if you met it's requirements and aren't wielding a two-handed weapon (hammer/bow/staff) then you will recieve the energy from it. The shield/focii slot is under where your weapons are placed when you wield them.
